About the role

Key Responsibilities :

  • Overall accountability for the people, product, service, and upkeep of their department.
  • Continually analyze and assess performance of the restaurant with a focus on wine and dinner service against its stated objectives; formulate strategies and enact remedies as appropriate.
  • Work in conjunction with F&B, Sales, and Marketing teams to formulate and strategies business and sales ideas – Explore opportunities through research and early activations.
  • Assist the Venue Manager + F&B director with staff recruitment, training and rostering of Front of House staff in order to ensure guest expectations are exceeded at all times. Training calendar to be created.
  • Manage the effectiveness & overall operations of internal systems and point of sale operations including general IT, Infrasys and 7 rooms.
  • Monitor production from the bar & kitchen to ensure high beverage & food standards for all guests.
  • Maintain the costs of the business – wage, beverage, maintenance and expenses costs as per budgets/targets. Ensure the budget is being met from a topline revenue to bottom line profit %

Skills & experience 

  • Demonstrated experience in a similar role as a restaurant or assistant restaurant manager
  • The ability to work under pressure in a busy and dynamic restaurant
  • Passion for culinary excellence 
  • Experience with silver service is not necessary but is recommended 
  • Excellent presentation and exceptional communication skills
  • Experience leading and training a high performing team
  • Sound knowledge of current food trends
  • A solid understanding of wine and service
