About the role
In conjunction with the Sous Chef, manages all aspects of the Kitchen Operation in our Lovedale Bar + Grill kitchen and from time to time may include our multifaceted kitchens with an emphasis on maintaining hygienic standards and practices, staff training and development, and overseeing the preparation and presentation of a consistent food product which meets customer’s expectations.
This is a full-time role for passionate chef seeking their next challenge and career progression within a high paced hotel environment.
Key Responsibilities:
Reporting to senior kitchen management & show your support by:
- Being a strong leader who’ll be hands on with the daily supervision of your operational outlet
- Collaborate with senior kitchen management in menu planning, implementation & execution
- Ensuring the highest level of quality in the preparation and presentation to ensure a consistent food product which meets our customer’s expectations.
- Ensure ordering and stock control for your outlet is done in a timely manner & manage wastage through controlled food preparation practices
- Maintaining the kitchen to hygienic standards and practices according to local health authorities & HACCP compliance
- Junior staff training & development including apprentices
- Ensure the department is operated within the appropriate legislation and Food Safety records are maintained up to date
- Personal grooming and appearance standards are met regarding cleanliness, sanitation and hygiene for yourself and your team

Skills & experience
- Great attention to detail and passionate in what you do!
- At least 2-3 years’ experience in a fast paced kitchens
- Experience in working in fast paced kitchens
- Excellent communication skills needed to liaise with multiple Food & Beverage Outlets
- Great organisation and problem solving skills
- Proven success in managing junior staff & leading a team
- Understanding of food cost and production
- Computer skills
- Available to work a rotating roster including evenings and weekends & public holidays
- Understanding of kitchen hygiene and safety procedures
- Trade cooking qualifications are essential (Certificate 111/IV in Commercial Cookery)
- Strong leadership and work ethic
- Have a full knowledge of, and practice all of the established hotel occupational health and safety guidelines (WH&S)
- You must meet the requirements to work in Australia to be considered
