About the role
You will be joining a fast paced hotel environment and will be supported by a large team of passionate and experienced hospitality professionals, and together you will continue providing an unforgettable Food & Beverage experience for our guests, customers and yourselves!

Reporting to the Executive Chef, Executive Sous Chef & Senior Sous Chef, you will undertake tasks specific to your role in all aspects of our multifaceted Kitchen operation whether in our fine dining Restaurant Redsalt, Lovedale Bar + Grill and our Conference & Events kitchens..
In this role, you’ll report to senior kitchen management and demonstrate your support by:
- Collaborating effectively with team members to ensure seamless kitchen operations.
- Assisting in menu planning and ingredient preparation, as applicable.
- Maintaining high standards of food safety and hygiene.
- Contributing creative ideas to enhance our food and beverage offerings.
- Participating in training and mentoring junior staff, fostering a positive team environment.
- Your support and initiative will play a crucial role in our kitchen’s success!
- Leadership: Lead by example, overseeing daily kitchen operations to ensure smooth functioning. Your leadership will be essential in driving excellence and creating a positive kitchen environment!
- Collaboration: Work closely with senior kitchen management in menu planning, implementation, and execution.
- Quality Assurance: Ensure the highest level of quality in food preparation and presentation, consistently meeting customer expectations.
- Inventory Management: Oversee ordering and stock control, managing wastage through effective food preparation practices.
- Hygiene Standards: Maintain kitchen hygiene standards in accordance with local health authorities and HACCP compliance.
- Training & Development: Support the training and development of junior staff, including apprentices, to foster their growth.
- Regulatory Compliance: Ensure departmental operations comply with relevant legislation, keeping Food Safety records up to date.
- Personal Standards: Uphold personal grooming and appearance standards for cleanliness, sanitation, and hygiene for yourself and your team.
- Being a strong leader who’ll be hands on with the daily supervision of your operational outlet
- Collaborate with senior kitchen management in menu planning, implementation & execution
- Ensuring the highest level of quality in the preparation and presentation to ensure a consistent food product which meets our customer’s expectations.
- Ensure ordering and stock control for your outlet is done in a timely manner & manage wastage through controlled food preparation practices
- Maintaining the kitchen to hygienic standards and practices according to local health authorities & HACCP compliance
- Junior staff training & development including apprentices
- Ensure the department is operated within the appropriate legislation and Food Safety records are maintained up to date
- Personal grooming and appearance standards are met regarding cleanliness, sanitation and hygiene for yourself and your team

Skills & experience
- Great attention to detail and passionate in what you do!
- At least 2-3 years’ experience in fast paced kitchen environment
- Excellent communication skills needed to liaise with multiple Food & Beverage Outlets
- Great organisation and problem solving skills
- Proven success in managing junior staff & leading a team
- Understanding of food cost and production
- Computer skills
- Available to work a rotating roster including evenings and weekends & public holidays
- Understanding of kitchen hygiene and safety procedures
- Trade cooking qualifications are essential (Certificate 111/IV in Commercial Cookery) or working towards.
- Strong leadership and work ethic
- Have a full knowledge of, and practice all of the established hotel occupational health and safety guidelines (WH&S)
- You must meet the requirements to work in Australia to be considered as no sponsorships will be offered
