About the role
As the Sous Chef of The Inchcolm Hotel, you’ll work closely with the Head Chef to shape the heartbeat of our kitchen. This hands-on role is a chance to lead by example, contribute to menu innovation, and ensure every plate leaves a lasting impression. Your key responsibilities may include:
- Collaborate with the Head Chef and key stakeholders to craft menus that delight across all service periods, elevating the guest experience.
- Build and maintain relationships with suppliers to source the finest ingredients, ensuring every dish meets our exacting standards.
- Play a key role in driving financial and operational goals through effective cost control and management strategies.
- Maintain impeccable kitchen standards and procedures, ensuring consistency and quality at every turn.
- Oversee the onboarding, training, and development of The Inchcolm kitchen team.
- Lead by example in taking a proactive and hands-on approach, guiding the team with passion and positivity.

Skills & experience
- Proven experience as a Sous Chef or a Junior Sous Chef in a high-end or boutique hotel setting.
- Exceptional culinary skills and deep knowledge of kitchen operations, with proficiency across all sections.
- Certificate III in Commercial Cookery and successful completion of a cookery apprenticeship.
- Food Safety Supervisor certification and a commitment to maintaining the highest food safety standards.
